Australia is now the fattest country in the world. We've gotten bigger than America. Two thirds of Aussies are overweight, but not if cookbook guru Annette Sym has her way. She's released yet another book full of new recipes and motivation to beat the bulge. Annette's cookbook is available at newsagencies from today. Marsala Chicken Recipe

SERVES: 4

INGREDIENTS:

4 x 125g chicken breasts flattened

cooking spray

3/4 cup Marsala wine

2 cups mushrooms sliced

1/4 cup shallots sliced

1 teaspoon crushed garlic (from jar)

1/2 teaspoon dried oregano

pinch black pepper

1 teaspoon salt-reduced chicken stock powder

2 teaspoons cornflour

1 cup evaporated light milk

STEPS:

Cook chicken breasts in a non-stick frypan that has been coated generously with cooking spray, about 4 minutes each side. Remove from pan and leave to one side. Pour Marsala wine into the same frypan and boil for 30 seconds. Add mushrooms, shallots, garlic, dried oregano, black pepper and stock powder. Bring back to boil then reduce to slow boil, stirring occasionally for 2 minutes. Combine cornflour with milk and pour into pan, stirring continuously until mixture boils. Return the chicken to pan and serve once heated through.

VARIATION: Replace chicken with lean veal steaks.

Suitable to be frozen for 2-3 weeks.

Says Annette.3 million copies have sold so far. Annette's even broken into the US market, and now here's a taste of what's in store this time around. I'm gonna do an all time Italian favourite that's normally a shocker, probably about 50 grams of fat, my way is 4.1. It's Marsala chicken." She says."We're just gonna slice up some shallots.. and some mushrooms and that's the hard work done." Next, chicken breast. And Annette says the healthiest way to cook it is in a non-stick fry pan with cooking spray. Then for sauce, a mix of Marsala, a teaspoon of garlic, stock powder and a half a teaspoon of dried oregano.

"You want a cup of evaporated light milk, that's a good way to have that creamy sauce you want."Add cornflour to thicken the sauce and then mix it all together in the pan. "Oh that smells so good and it takes a couple of minutes to make this its amazing." Pour on to the chicken, and for carbs Annette's quick and easy potato bake.

"Dinner covered, now to dessert. And yes even cheesecake, is on the menu.That's like the real thing, under 5 grams of fat."Annette says she too was like many people continually frustrated at not being able to shift weight and its why she's now made this latest book. She says it will give you a great chance at success.She says "Trust it, give it your all and watch those kilos fall."

You don't need to go to a fancy restaurant you can do it at home now. I can have that every night and its a 10th of the fats you normally expect."
